Kim’s group finds that a similar process is occurring when the green shoots are growing from older cloves of garlic.

They found that the garlic sprouts, which have sprung up in five days had the highest antioxidant activity.

At the same time, raw garlic has a lower antioxidant activity.

When we look into the matter a little deeper, we can see that the germination is changing metabolic profile of garlic.

The metabolic profile of garlic that is emerging for five to six days is different from the metabolic profile of garlic that is emerging for four days or less.

The researchers concluded that germination may be a viable method to increase the antioxidant potential of garlic.

So go ahead, grab a couple of local, organic, garlic clove with a market shelf.

Then simply allow them to germinate in your storage closet to enlarge its antioxidant properties.
